Ingredients

  • • 1 cup Local Village whole tiger nuts, soaked overnight
  • • ½ cup honey or 3 bananas
  • • 2 tins coconut cream
  • • 1 tsp vanilla extract or essence
  • • Coconut sugar swirl
  • • ¼ cup coconut sugar
  • • ¼ cup coconut cream or normal cream
  • • 1 pinch salt
  • • Tigernut crumble
  • • ½ cup Local Village tiger nut flour
  • • 2 tbsp honey
  • • 2 tbsp coconut oil, melted
  • • ¼ cup chopped nuts of choice, we used cashew nuts

Instructions

METHOD
1. In a food processor or blender jug, blend the tiger nuts, dates, coconut, cream and vanilla until you get a thick liquid, almost resembling a thick smoothie. Using a sieve, strain the pulp from the liquid. Pour the liquid into a bowl or container and place in the freezer for 1 hour. You can use your churner if you have one.
2. Remove the ice cream, using a spoon or whisk, mix the frozen ice crystals into the rest of the mixture. Freeze again for 1 hour. After two hours mix the caramel and crumble through the dessert. Freeze again until.
3. For the caramel, place all the ingredients in a medium saucepan on medium heat. Whisk while the sugar dissolves. Simmer for 5-8 minutes until syrup-like consistency. Set aside to cool down. Store in the fridge.
4. For the crumble, place all the ingredients except for the nuts into a bowl. Mix with your fingertips to create a crumble.
5. Once the ice cream has frozen, allow thawing slightly before scooping into bowls.
